This meal is incredibly cheap and unbelievably easy to make. This is a great meal to make in the summer, when you don't want to eat too much hot stuff. Try it once, and you'll be amazed at how good it tastes. This recipe makes about 4 servings.
Ingredients:
| 2 cups | cottage cheese | 500 g

| 4 | medium potatoes |
|
| handful | chopped chives or scallions | (optional)
|
Directions:
- Cut potatoes in quarters.
- Fill medium-sized pot with water, add potatoes, and bring to a boil.
- (Alternately: place vegetable steamer in saucepan, add just enough water so that it almost touches the bottom of the steamer, place potatoes on vegetable steamer, cover pot, and bring to a boil.)
- Reduce heat to low or medium low, and let potatoes cook for 15 - 20 minutes (or until are tender when stabbed with a fork).
- Serve each person with 4 potato quarters (i.e. one potato) and approximately ½ cup (i.e. 250 g) cottage cheese.
- Place cottage cheese beside potato, or on top of potato, whichever you prefer. Season with salt to taste.
- Optional: top with chopped chives or scallions.
- Optional: serve with tomato salad (recipe follows).
Tomato Salad Ingredients:
| 4 - 6 | large, ripe tomatoes |
|
| 1 - 2 dollops | sour cream or plain whole milk yogurt | approx. 50 ml
|
| 1 tsp | dried dill weed | 5 ml
|
| ½ tsp | salt | 2 - 3 ml
|
| ¼ tsp | pepper | 1 ml
|
Directions:
- Cut tomatoes in quarters.
- Remove green stem bits.
- In bottom of salad bowl, mix sour cream with dill, salt, and pepper.
- Add tomatoes, and mix gently.
- Serve immediately.
