If you have a bunch of green (or mostly green) bananas and you want them to ripen quickly, put them inside a brown paper bag. The bag will trap the invisible gas that ripening fruit gives off, and this will make them ripen more quickly.
If you want them to ripen REALLY quickly, put one or two bananas which are already ripe into the paper bag with the green bunch. This really speeds up the process.
If you have a bunch of bananas that you want to ripen slowly, so that they don't go brown too quickly, separate the bananas. In other words, tear each banana off the bunch, so that you are left with a handful of individual bananas. These will ripen MUCH more slowly than if they were kept together as a bunch.
